One of my favourite foods in the world, before I started a Low FODMAP diet was a Peanut butter and banana sandwich on a saturday afternoon. These days I can’t eat bread, firstly due to a low carbohydrates diet for my SIBO and Gluten Intolerance, however I have prevailed in finding an alternative…Banana Pancake Sushi Rolls! I usually eat them for lunch (calorie wise they combine my lunch and a little treat in one), put on an old movie and snack a way, ah…bliss. Even though they are high in calories, nutritionally (and in taste) they beat a slice of chocolate cake hands down.
