While living on a low FODMAP diet it can be a challenge truing to find hearty meals that are full of flavour. However the other day I had a meeting with one of my clients and we decided to order a bowl of laksa. There are many versions of Laksa, its origin being from south east Asia, predominately from Malaysia, Indonesia and Singapore. It is a thick flavoursome dish served with noodles. This is my ‘throw it all in’ Laska, I had a lot of veggies that needed eating so pretty much threw them in the pot and hoped for the best and I have to say I was impressed and so was my other half. The rich texture from the coconut milk and aromatic aroma from the thai spices made for a perfect week day dinner!
