Morning everyone! Well I have been experimenting this morning with some more breakfast pancakes, and I think I’ve found the yummiest! Banana and egg pancake without any flour. These little beauts are delish’ and they are packed high in protein, vitamins and slow releasing carbs from the banana. What more could you want for a breakfast or light snack. There also great for kids!
Flour Free Banana Pancakes

- 1 Banana
- 2 Eggs
- 1 tsp coconut oil

- Put 1 chopped banana, 2 eggs and 1 tsp of coconut oil in a mixing bowl. Whisk.
- Heat frying pan on a low heat with a little oil and slowly pour pancake mixture into the pan to make small individual pancakes. This will take about 1min each side.
- Move to a plate add your topping of fruit or maple syrup and enjoy :)
