Low FODMAP Chilli Con Carne…with a secret Ingredient!

Simple food is always the best in terms of health but that doesn’t mean have to compromise on flavour though. On a low FODMAP diet it’s a challenge to whip up something easy and tasty in the kitchen after a long day at work. The other day I fancied something spicy and full of flavor as I had literally been grazing on pumpkin seeds and carrot sticks all day (I know, not great) and I though ‘Ooo, chili con carne!’ I hadn’t had it in years. The trouble is most of the shop bought chili is loaded with garlic, onion and sugars! I knew what I wanted  and I wanted it now and nothing else would satisfy my craving. and I love a good challenge, so I figured I would do my best to come up with my own recipe and share with you lovely people. Oh, and just to give you a heads-up your family will not be disappointed when you serve them this version of chili con carne, you would never know there’s no onion or garlic and it goes great with rice, courgette or quinoa. If you find meat difficult to digest you can minus the meat and add lentils to give it more substance.
