Low FODMAP Quiche With a Twist

It’s summer time here in Thailand and with scorching hot days (and nights) it means the amount of food I eat is minimal and has to be light. I spend most of the day sipping on icy lemon water and berries. However the one thing I do associate with summer is quiche and salad, it’s light and easy to digest, not to mention packed with protein. For this recipe I wanted to make it visually appealing as I had some friends coming over and they loved it; they also couldn’t believe it was gluten free! If you want you can also make a crustless version if your looking to drop a few extra pounds for the beach.
