Ingredients
- 316g white rice flour
- 1/4 cup brown rice flour
- 350g Granulated sugar
- 1 tsp baking soda
- 1/2 cup of granulated sugar
- 1 tsp of Xanthan Gum
- 1/2 tsp salt
- 277g unsalted grass fed butter
- 2 large eggs

Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
- In a mixing bowl add all the dry ingredients and mix together well. And leave to one side.
- Cream together butter and sugar. Whisk eggs in another bowl and add to the butter mixture little by little, then add the dry mixture until all is blended well together to make a dough.
- Place the dough in the fridge for 15min. Then roll out the dough and cut out the cookies using a cookie cutter or small round glass.
- Place in the oven for 12 to 15min or until slightly golden. And allow them to cool and keep them in an air tight container.
