Thai Lemongrass & Coconut Soup Low FODMAP

Since living in Thailand for 6 years I’ve made many friends who have taught me about Thai cooking and how to use the traditional Thai flavours of sweet and sour combined. This dish is pronounced ‘Tom-kha-Kai’ translated to ‘chicken & galangal soup’. I’ve created the recipe so it’s completely low FODMAP butr still kept the true taste of Thailand.
